Easy and Delicious Spaghetti Squash.

Spaghetti squash has less calories, and is much more nutritious than regular spaghetti.
Ingredients:
One medium spaghetti squash
3-4 cups of any of your favorite mushrooms
Sauce:
1 TSBP of coconut or your favorite oil
1 bunch of Swiss chard
3-4 garlic cloves
1 medium onion
1 can of coconut milk
1 TBSP of lemon pepper seasoning
Salt and pepper to taste
Instructions:
I love this spaghetti squash recipe, and it is mostly vegan, with the exception of cheese, which you can substitute for vegan cheese if you’d like.
I start off with washing a spaghetti squash and pocking holes in it with a knife. Meanwhile, I preheat the oven to 400 degrees FH.
I put the squash into the oven, and let it bake for about 40-60 minutes, or until I can put a knife through the squash easily. Then I take out the squash and let it cool down outside the oven. When the squash is cool enough I cut it in half, take the seeds out, and then use a fork to go over the squash and separate the strands until they look like spaghetti. I set the squash aside, and work on the sauce.
Vegan mushroom alfrado sauce:
I start off with 3 heads of garlic. Sometimes I also add one onion, I didn’t have any onions at home so I skipped this step. I add one table spoon of coconut oil and cut the garlic into small slivers, and add it to a skillet and cook until brown. If you add an onion, you would cut it into 3 cm circles and add. I then add 3-4 cups of cut mushrooms into the pan and stir with the garlic and onions. At this point I really like adding spices, my favorite spice mixture is the lemon pepper zest (you can buy it at Cosco). After about 8 minutes, when the mushrooms have softened, I add one can of coconut milk, cover the lid and let it simmer. After about 5 minutes I add one bunch of Swiss chard that has been cut into 20 CM stripes. I let it cook for a few more minutes until the Swiss chard is softened, and then add salt and pepper to taste.
Assembly:
Use an oven safe dish, mix spaghetti squash with sauce and put in the dish. Add as much grated cheese on top as you would like. You can either choose to microwave it so the cheese would melt (not recommended), or put the dish in the oven under the broiler option and cook it for 2-3 minutes or until the cheese melts.
