Healthy Oatmeal Pancakes.

What can be better for a weekend brunch than some delicious pancakes. The best part about these pancakes, is that they are 100% healthy, and soo delicious, you will want to make them all the time.
Ingredients:
2 cups of old fashion oats
1 egg
1 tsp baking powder
1 banana
1 tsp vanilla
1 tsp chia
2 cup of almond milk
1 tbsp organic coconut sugar
2 cups of your preferred milk-I like almond
Instructions:
I normally prepare these in a food processor, however, you can also do it in a blender. Put the oats inside of your food processor/blender and blend until the oats become a consistent power.
This is how the flour will look after being mixed.
Add the chia seeds, baking powder, egg, banana, vanilla, and milk to the mixture and mix again for a few minutes, until you have an even consistency. Let the mixture sit for about ten minutes, as the chia seeds need time to absorb some of the liquid and expand.
Fold the chocolate chips/nuts, or your preferred additives to the mixture.
Prepare a pan on medium high, and add coconut oil. Once the oil is hot add a few spoons of batter to the pan and cook for 2-4 minutes or until you see bubbles in the pancakes and then flip it over, and cook for another few minutes until the pancakes are golden brown on both sides.
I like to eat them with pure maple syrup.
