Around this time a year, we really love going to our local farmers market to pick up local fruits and vegies from near by farmers. We go on Sunday around closing time, when the vendors drop their prices to sell their produce quickly to open room for the new weekly supply.
This particular trip, we found gorgeous apricots. Since we bought such a large quantity, we needed to do something with them before they spoil.
That's when we decided to make a delicious Jam, that will also last us throughout the year (or until we eat it).
This is the process:
Clean the apricots and remove the seeds. I like to keep in halves.
Step 1:
Each kilogram of apricots requires about half a kilogram of sugar. You will want to measure your apricots, and then measure the sugar according to the amount of apricots you have that should equal to half of your fruits.
Step 2:
The apricots and sugar go into the oven for 45 minutes at a temperature of 350F.
Step 3:
After the 45 minutes, leave the apricots in the oven overnight. (during this time the oven should not be working, but the apricots simply cook from the heat that is left over).
On the next day repeat steps 2 & 3 again.
On day 3 repeat steps 2 & 3 again.
Before pouring the jam into the jars, sterilize the jars in a microwave oven for 2 minutes with a little quantity of water (make sure to take the lids off).
We spread the jam into the jars. At the bottom I had a syrup with undissolved sugar.
I place it on the stove, and boiled until all the sugar dissolved, and then added it into the jars.
It's very tasty and all the fruits hold their shape.
Try it! It’s simple and easy!
